Need a quick refreshing dish to take to your next potluck?  This cucumber salad with feta, chickpeas, cranberries and basil is loaded with fresh greens, and sweet and salty flavors and crunchy deliciousness in each bite.

A few years ago when my family and I moved to Colorado, we were lucky to find a house. The market was (and still is) pretty competitive, and houses were selling like hotcakes, often within the same day they were listed.  We had instances where we were told to not even come to an open house because the seller had already received 4-5 offers.  It was discouraging to say the least. 

So, when we saw the listing for our current home pop up on the market, we didn’t get too excited, but we did schedule a walk through right away.

Upon seeing the house in person, we realized it was perfect for us – plenty of bedrooms for our brood and our frequent family visitors, a nice big backyard with a swing set (our boys were happy about that one), an big open layout with lots of windows and light. Plus, the original buyers, we learned, had also come from Chicago so it felt almost kismet.

What we didn’t realize at the time was that we had also totally scored in the neighbor department.  Our house is at the end of a cul-de-sac, and has 8 other houses in our little court. It’s a tight-knit group, we learned, and most of them have lived here for a long time, watching kids grow up and helping each other out, like neighbors should.  It’s been a lucky surprise that we have such amazing people living around us.

Each summer, all the neighbors pool together to host an annual block party. Everyone brings a few things to pass around and we hang out and catch up on everything everyone’s been up to. The food is always amazing and of course, the company is always great.

I usually bring some type of salad and this year I brought my standby dish, cucumber, basil, feta and chickpea salad.  I’ve been making a version of this recipe for years and it’s great for potlucks – saltiness of the cheese, the sweetness of the cranberries, and the crunchy cucumbers all come together in a satisfying bite, and the basil adds just the right touch of herby-ness to make it interesting. 

Cucumber Basil Feta Chickpea Salad With Cranberries

This cucumber salad is great as a side, but could also be a great vegetarian option since the chickpeas add a bit more "meat" to the salad and make it pretty filling on it's own. For an easy summer dish, it can’t be beat. Oh, and there’s no turning on the oven whatsoever, which during the summer, earns a gold star in my book. 

Try this one at your next potluck meal, or at home paired with burgers or grilled chicken.  It may become your next standby dish too!

Cucumber, Basil, Feta, And Chickpea Salad with Cranberries

Ingredients

For The Salad

  • 2 Cups chopped cucumber

  • 1 Can chickpeas

  • ½ Cup crumbled feta

  • ½ Cup Cranberries

  • 1 Handful basil, chopped

For The Dressing

  • 1 Small shallot, finely chopped

  • ¾ Cup olive oil

  • ¼ Cup white wine vinegar

  • 3 Tablespoons fresh lemon juice

  • 2 Tablespoons fresh orange juice

  • ¼ Teaspoon finely grated lemon zest

  • Salt and pepper to taste

Directions

  1. Combine cucumber, chickpeas, feta, cranberries and basil in a bowl.

  2. For the dressing, combine all ingredients through the lemon zest in a bowl or small jar and mix well. Add salt and pepper to taste.

  3. Pour dressing over salad and mix well to combine. Serve immediately.
