Ingredients
Cook the veggies. Cook the onions in a large dutch oven for 5 minutes. Add mushrooms and cook for 8-10 minutes more.
Simmer the chicken mixture. Add the chicken broth, rosemary, and diced chicken. Simmer until chicken is cooked, then add the frozen peas and carrots.
Create the slurry. Whisk the cornstarch with a small amount of the chicken broth to form the slurry. Add it to the soup and stir until it thickens slightly.
Prepare the biscuit topping. Combine the flour, baking powder, baking soda, and salt. Cut in butter, then add buttermilk, egg and cheddar cheese.
Assemble. Remove the chicken mixture from heat. Drop spoonfuls of the cheddar biscuit dough to the top and carefully smooth the biscuit batter in an even layer over the chicken and veggies.
Bake. Bake for 40 minutes until the top is golden brown and the sides are bubbling.
Allow for steam. Leave a little space around the outer edge of the casserole to allow the steam to escape while baking.
