Create the butter miso paste by mixing butter, miso, honey, vinegar and spices in a large bowl.
Add the chicken pieces and the butter-miso paste to a large bowl and combine until chicken is well coated.
Arrange the chicken on a baking sheet and roast them for 30-40 minutes.
Serve chicken topped with scallions and a side of rice, Asian noodles or a green salad.
Flip the chicken at least 2x during the baking process to ensure all sides are nice and crispy!
