Ingredients
Prepare your pans. Heat the oven to 350 degrees, grease your pans, and line with parchment paper.
Cream the butter and sugar. Combine the softened butter and sugar and mix with a hand mixer or in a stand mixer. Add the eggs and vanilla and mix until just combined.
Mix the dry ingredients. Add the flour, baking powder, baking soda and salt to a medium bowl and whisk to combine.
Make the batter. Combine the wet and dry ingredients and mix until combined. Pour the cake batter into the two prepared, round 8-inch cake pans.
Bake. Bake the vanilla cakes for 30-33 minutes, until the cake is brown at the edges and a toothpick comes out clean.
Assemble the cake. Place one layer of cake on a large platter. Top with the strawberry filling, then place the other layer of cake on top.
Ice. Ice the cake with the whipped cream frosting and arrange fresh, sliced strawberries on the top.
Don't spread the strawberry filing to the edges. To avoid the filling from bleeding out the sides of the cake, leave about 1/2 inch of space around the edge when adding your filling.
