Ingredients
  

For The Salad

  • 2 cups chopped cucumbers
  • 1 can chickpeas
  • ½ cup crumbled feta
  • ½ cup dried cranberries
  • 1 handful basil, chopped

For The Dressing

  • 1 small shallot, finely chopped
  • ¾ cup olive oil
  • ¼ cup white wine vinegar
  • 3 tablespoon fresh lemon juice
  • 2 tablespoon fresh orange juice
  • ¼ teaspoon finely grated lemon zest
  • salt and pepper to taste

Instructions
 

  • Combine cucumber, chickpeas, feta, cranberries, and basil in a bowl.
  • For the dressing, combine all ingredients through the lemon zest in a bowl or small jar and mix well. Add salt and pepper to taste.
  • Pour dressing over salad and mix well to combine. Serve immediately.
