Peanut Butter Oatmeal Bars With Bananas And Chocolate Chips

These baked peanut butter oatmeal bars are a great healthy snack, and these are the BEST, with a delicious peanut butter flavor combined with bananas and chocolate chips.

Ingredients
  

  • ¾ cup butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoon half n half
  • ½ cup peanut butter
  • 1 banana (ripe), chopped into small pieces
  • 1 cup flour
  • 1 cup oats
  • 1 teaspoon salt
  • ½ cup walnuts
  • ½ cup chocolate chips

Instructions
 

  • Preheat your oven to 350 degrees and butter an 8x8 inch rectangular pan well.
  • Cream the butter and brown sugar together with a hand mixer or in a stand mixer.
  • Add eggs, vanilla, half n half, and peanut butter, one at a time, to the butter and sugar mixture. Add the chopped banana (try your best not to mash the banana into the mixture – the goal is to preserve some banana chunks in the mix.).
  • Mix together the flour, oats, salt, and baking soda.
  • Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  • Stir in chocolate chips and walnuts
  • Bake in the oven for around 25 - 30 minutes, or until you insert a toothpick and it comes out clean.
  • Let bars cool completely before slicing.
