Ingredients

  • 2 cups whole raw cashews
  • 2 tablespoon avocado oil (or other neutral oil)
  • 2 teaspoon coarse sea salt
  • 1 teaspoon freshly ground cracked black pepper

Instructions

  • Heat a large skillet over medium heat. Add oil and cashews and cook, stirring continuously until lightly toasted, about 4-5 minutes.
  • Remove from heat and place on a rimmed baking sheet lined with paper towels. Allow to cool slightly, then transfer the cashews to a medium bowl.
  • Sprinkle salt and pepper over cashews and toss gently to coat.
  • Serve immediately. If saving for later, wait until cashews are completely cooled before storing them in an airtight container.

Notes

  • Don't let the cashews burn! Watch them carefully as you’re toasting them and stir them often. You’ll know they’re about done once they start to smell fragrant.
  • Adjust the salt and pepper levels. Everyone likes different levels of salty, so add a little, taste, and then add some more if you feel like they need some extra.
  • Mix up the spices! Salt and pepper is a classic, but you can make these toasted nuts your own by adding different spices. Want to give them an Italian flare? Add some dried rosemary. Looking for something a bit spicy? Add some cayenne. The choices are as limitless as your imagination.
