This easy Texas caviar mixes black-eyed peas, black beans, corn, pineapple, and avocado with a tangy lime and cumin dressing. Serve it as a dip with tortilla chips or as a fresh bean salad. No cooking required.
1jalapeno, finely diced(remove seeds for less heat)
¼cupfinely chopped cilantroplus more for garnish
15ozcan blacked beansdrained and rinsed
15ozcan black-eyed peasdrained and rinsed
½cupdiced pineapple
1ripe avocadodiced
Dressing
1 ½tablespoonwhite wine vinegar
1 ½tbsp fresh lime juice (about 1 large lime)
½teaspoonchili powder
½tsp ground cumin
1 tsp maple syrup
½teaspoonsmoked paprika
½teaspoongarlic powder
¼cupneutral oil(like avocado or grapeseed oil)
salt and pepperto taste
tortilla chipsfor serving
Instructions
In a small bowl, whisk together the white wine vinegar, lime juice, chili powder, cumin, maple syrup, smoked paprika, garlic powder, oil, salt, and pepper. Set aside.
In a large bowl, combine the corn, bell pepper, red onion, jalapeño, cilantro, black beans, black-eyed peas, pineapple, and avocado. Pour the dressing over the top and mix well to combine.
Serve immediately with tortilla chips, or cover and refrigerate. It keeps for 1 to 2 days with the avocado, or 3 to 4 days without it.
Notes
Making it ahead? Mix everything except the avocado and add it right before serving so it stays bright green.
If your red onion is especially pungent, soak it in vinegar or water for 10 to 15 minutes, then drain.
For more heat, add a couple dashes of hot sauce or leave a few jalapeño seeds in.
Store covered in the refrigerator for 1 to 2 days once the avocado is added, or 3 to 4 days without it.
