Ingredients

  • 2 ½ cups Kodiak Cakes pancake mix (or another mix like Bisquick or Krusteaz)
  • dash of cinnamon (optional)
  • 2 eggs
  • 2 cups milk
  • 1 tablespoon oil or butter, melted
  • toppings of your choice - I used strawberries, blueberries, and chocolate chips

Instructions

  • Preheat your oven to 425 degrees.
  • Grease your pan with oil, or melted butter. (I like to place the butter on my pan, then put it in the preheating oven for 2-3 minutes to melt. Swirl the butter around the pan to coat it.)
  • In a large bowl, add the pancake mix, a dash of cinnamon (if using), eggs, and milk. Mix until just combined.
  • Pour the pancake batter into your prepared sheet pan and spread it evenly across the pan with a spatula. Then top with your choice of add-ins (just sprinkle them right on top of the batter). Strawberries, blueberries, and chocolate chips are a delicious combination!
  • Bake the pancakes for 12-14 minutes. You’ll know the pancakes are done when you stick a toothpick in the center and it comes out clean. The pancakes should be a very light, golden brown. Be careful not to overcook!
  • Cut the sheet pan pancakes into squares and serve with your choice of toppings: syrup, honey, peanut butter, powdered sugar, etc.
