This Easy Peach Cobbler is made with fresh peaches and a box of cake mix, creating a delicious cobbler with a gooey peach filling and a golden, buttery cobbler crust.
12tablespoonbutter(divided into 3 tablespoon and 9 tbsp)
½ cupbrown sugar
1tablespooncorn starch
1box13.25 oz yellow cake mix
½teaspooncinnamon
¼ teaspoonnutmeg
Instructions
Preheat your oven to 350 degrees.
Wash the peaches well, then slice the peaches, removing the pits.
Add 3 tablespoons of butter to a medium-sized saucepan over low to medium heat, then add the sliced peaches, ½ cup brown sugar, and the cornstarch. Simmer the peach mixture for 10-15 minutes until peaches are soft and the mixture takes on a syrupy consistency.
In a medium-sized bowl, add the cake mix, cinnamon, and nutmeg and stir well to combine.
Melt the remaining 9 tablespoon of butter in a small saucepan or in the microwave.
When the peach filling is ready, pour it into a 9x11 greased baking pan or casserole dish. Sprinkle the dry cake and spice mixture over the top of the peaches, then pour the melted butter over everything. Stir the mixture with a spatula until just combined, and the cake mix is fully moistened.
Bake for 30-40 minutes, until the cake mixture is cooked through and the peach mixture is bubbling.
Notes
Don't worry about peeling the peaches - you won't be able to even tell the skins are on after you've cooked them.
Make sure the cake mixture is fully moistened with the peach syrup and butter before placing it in the oven.
