    Easy Peach Cobbler With Cake Mix

    This Easy Peach Cobbler is made with fresh peaches and a box of cake mix, creating a delicious cobbler with a gooey peach filling and a golden, buttery cobbler crust.

    I LOVE peach cobbler. Growing up, my Grandparents had a peach tree in their yard, and my Grandmother, an excellent cook, used to make loads of peach desserts - cobbler, pies, sauces, crisps - it was a peach lovers paradise! And while I love a traditional peach cobbler, this version using cake mix makes it a cinch to make. If you're looking for a quick and easy dessert, and a good way to use up those peaches, keep reading! You'll be making this simple peach cobbler recipe all summer long!

    Why This Recipe Works

    I love this recipe for many reasons:

    • Fresh peaches. So many peach cobblers with cake mix recipes use canned peaches. There's nothing wrong with it, but there's really just no comparison between fresh and canned peaches. I love the fresh peach taste and texture in this recipe.
    • Easy. This is sort of like a peach cobbler dump cake - you literally just dump everything in, bake it, and it transforms into this magical buttery peachy concoction that screams summer. 
    • Simple ingredients. This recipe uses super simple ingredients. Besides the cake mix and peaches, you really only need a handful of warm spices, butter, and sugar.
    • Delicious. This recipe uses a fair amount of butter (sorry, not sorry) that, when melted, seeps through the dry cake mix and creates a golden brown crust over the juicy peaches below. It's so so good.

    Just a few simple ingredients are needed for this easy peach cobbler recipe.

    • Peaches. Of course! Fresh, ripe peaches are best for this easy cobbler recipe and the only way to make this IMHO. But, if you must, canned peaches can be used as substitutes.
    • Butter. Adds richness and helps create the perfect golden brown top for the cobbler.
    • Brown Sugar. Sweetens the peach filling and adds a hint of molasses flavor.
    • Cornstarch. Cornstarch is a common thickener for cobblers and pies. 
    • Yellow Cake Mix. The foundation of the cobbler, providing a sweet, cake-like topping.
    • Cinnamon and Nutmeg. These warm spices complement the juicy fresh peaches and add to the flavor of the cobbler.

    How To Make Peach Cobbler With Cake Mix

    This cake mix cobbler is one of the easiest desserts you can make. Here's how you do it.

    1. Preheat and prep. Preheat your oven to 350°F. Pit and slice 8 large peaches. (No need to peel them - we're keeping this EASY!)
    2. Prepare the peach filling. Melt 4 tablespoons of butter in a medium-sized saucepan. Add the sliced peaches, ½ cup brown sugar, and 1 tablespoon cornstarch. Simmer for 10-15 minutes until the peaches are soft and syrupy.
    3. Mix the dry ingredients. In a medium bowl, combine the box of yellow cake mix, ½ teaspoon cinnamon, and ¼ teaspoon nutmeg.

    1. Melt the butter. Melt the remaining 8 tablespoons of butter in a small saucepan or in the microwave.
    2. Assemble the cobbler. Pour the peach filling in an even layer into a greased 9x11 baking dish. Evenly sprinkle the dry cake mix over the top of the peaches. Drizzle the melted butter over the top of the cake mix. Use a spatula to mix everything until the cake mix is fully moistened.

    1. Bake. Place the baking dish in the pre-heated oven and bake for 30-40 minutes, until the top is golden brown and the peach mixture is bubbling.

    Variations and Substitutions

    • Canned peaches. I don't love using canned peaches here, but if you don't have fresh or frozen peaches, you can use two 15-ounce cans of peaches.
    • Different cake mixes. I like a yellow cake mix for this cobbler, but you could try a white cake mix, or spice cake mix if you have those on hand, or to mix it up.
    • Additional spices. Add a pinch of cloves or ginger for extra warmth.
    • Try a different fruit. Substitute or add other fruits like blueberries or blackberries for a blueberry cobbler or a mixed fruit cobbler.

    Frequently Asked Questions

    Can I use canned peaches instead of fresh?

    Yes, you can use canned peaches. Make sure to drain them well if using peaches in heavy syrup.

    Should I peel the peaches?

    You can, but to keep this recipe simple, I don't bother. You really don't even notice the skins after the cobbler has been baked. (If you do want to peel your peaches, here's an easy guide on how to do it.)

    How should I store leftovers?

    Store any leftover cobbler in an airtight container or cover the baking dish with plastic wrap. It will keep for 3-4 days in the refrigerator.

    Can I make this cobbler ahead of time?

    Yes, you can prepare the peach filling and dry cake mix separately ahead of time. When ready to bake, assemble and bake as directed. Or, you can prepare the whole thing in advance, then just heat it in the microwave when ready to serve.

    What’s the best way to serve peach cobbler?

    With ice cream of course! Serve this simple cake mix peach cobbler warm with a big scoop of vanilla ice cream (my favorite!) or a dollop of whipped cream for the perfect dessert.

    Can I freeze this peach cobbler?

    Yes. Cool it completely, then wrap tightly in plastic wrap and foil. It will keep for up to 3 months. Thaw in the refrigerator overnight and reheat in the oven or microwave.

    Ingredients
      

    • 8 large peaches pitted and sliced
    • 12 tablespoon butter (divided into 3 tablespoon and 9 tbsp)
    • ½ cup brown sugar
    • 1 tablespoon corn starch
    • 1 box 13.25 oz yellow cake mix
    • ½ teaspoon cinnamon
    • ¼ teaspoon nutmeg

    Instructions
     

    • Preheat your oven to 350 degrees.
    • Wash the peaches well, then slice the peaches, removing the pits.
    • Add 3 tablespoons of butter to a medium-sized saucepan over low to medium heat, then add the sliced peaches, ½ cup brown sugar, and the cornstarch. Simmer the peach mixture for 10-15 minutes until peaches are soft and the mixture takes on a syrupy consistency.
    • In a medium-sized bowl, add the cake mix, cinnamon, and nutmeg and stir well to combine.
    • Melt the remaining 9 tablespoon of butter in a small saucepan or in the microwave.
    • When the peach filling is ready, pour it into a 9x11 greased baking pan or casserole dish. Sprinkle the dry cake and spice mixture over the top of the peaches, then pour the melted butter over everything. Stir the mixture with a spatula until just combined, and the cake mix is fully moistened.
    • Bake for 30-40 minutes, until the cake mixture is cooked through and the peach mixture is bubbling.

    Notes

    • Don't worry about peeling the peaches - you won't be able to even tell the skins are on after you've cooked them. 
    • Make sure the cake mixture is fully moistened with the peach syrup and butter before placing it in the oven.
