Pancake Tacos With Eggs And Bacon - Fun Breakfast Recipe
Pancake Tacos with Eggs and Bacon are the ultimate breakfast recipe when you're looking for something fun and different! Fluffy pancakes stuffed with creamy scrambled eggs and savory bacon, all lightly drizzled with maple syrup. It's a fun and different twist on your typical breakfast that kids LOVE. Plus, it's an easy breakfast recipe that's perfect for Taco Tuesday or any day you want to make breakfast extra special.
Make the bacon. I like to make my bacon in the oven, as it’s easy to clean up when you’re done, and you can cook it while you cook the eggs and pancakes. (And the bacon comes out perfectly every time!) But, you can make the bacon on the stovetop or even in the microwave if that’s easier for you.
Make the pancakes. Try to make these thin enough and big enough that they are easily able to fold into a taco and hold the filling. Set aside and keep warm.
Make the scrambled eggs. Everyone likes their eggs a bit differently, but I prefer mine soft and creamy. (Learn how to make perfectly cream scrambled eggs here.)
Assemble your tacos. Once everything is cooked, stuff each taco with a spoonful of scrambled eggs, and slices of bacon. Drizzle a ½ tablespoon of maple syrup over the top and serve.

Try to make the pancakes a bit thin to make them easy to fold
Baking the bacon in the oven allows for easy cleanup and also lets you make the pancakes and the eggs while the bacon is cooking.
Customize by adding other savory ingredients, or make these sweet instead, using fruit, chocolate chips, sour cream, or creme fraiche.
