    These breakfast pancake tacos bring together the best part of breakfast-fluffy pancakes, crispy oven-baked bacon, and creamy scrambled eggs-into a taco shape that's as fun to eat as it is tasty. Here's why I love it.

    1. Easy. The biggest difference from a normal pancake, bacon, and egg breakfast is the assembly, which is super easy.     2. Delicious. These are so yummy, and while they originally appeared as a breakfast item at IHOP, they remind me of McDonald's McGriddle sandwich.     3. Fun for a crowd. Whether you're making these for a weekend brunch, a special occasion like Valentine's Day, or a birthday party breakfast, this is a great recipe for a crowd since the tacos are easy to portion. 
    4. Versatile. I went the classic route, but you can totally get creative with these adorable tacos. Make them ultra-savory by making scallion pancakes and topping them with a drizzle of sour cream. Or make them fruity and add in some chocolate chips. There are loads of ways to make these little tacos your own.

    Just a few simple ingredients are needed for these easy pancake tacos. Here's what you'll need

    • Pancakes. The foundation of our pancake breakfast tacos. You can use whatever pancake recipe you like, or even boxed pancakes, to make your pancake taco shell. To make things easy, I love Kodiak Cake Pancake Mix.  Tip: Try to make the pancakes thin enough to fold easily but still fluffy.
    • Bacon. Hickory-smoked bacon adds a crispy, savory crunch. Baking the bacon in the oven ensures it comes out perfectly every time.
    • Eggs. Soft and creamy scrambled eggs are the heart of the taco. 
    • Maple Syrup: A drizzle of warm maple syrup ties everything together with a touch of sweetness.

    Variations And Substitutions

    This easy pancake tacos recipe uses classic ingredients, but here are a few ways to change things up!

    • Sweet pancake fruit tacos. Use chocolate chip pancakes and fill them with fresh fruit like strawberries, bananas, or blueberries. Drizzle with maple syrup or a drizzle of honey for a sweet treat.
    • Cheesy pancake tacos: Add some shredded cheddar cheese and chopped green onions to your scrambled eggs or sprinkle it on top before folding your pancakes to make a savory pancake taco.
    • Savory additions. Consider adding spiced-up sausage gravy or green onions to your taco pancakes for an extra flavor boost.
    • Healthier option. Use regular or Greek yogurt in place of maple syrup, and add fresh fruit for a nutritious twist.
    • Bacon pancake tacos. This is a fun idea - break your pancakes up into bits and sprinkle them into the pancake batter before baking the pancakes.

    How To Make Pancake Tacos

    This breakfast taco recipe is super easy to make. Here's what you'll do:

    1. Make the bacon. Preheat your oven and arrange the bacon on a baking sheet. Bake until crispy. Alternatively, cook it on the stovetop or in the microwave if you prefer. (Here's a full guide for making the bacon in the oven if you want to go that route!)
    2. Make the pancakes. In a large bowl, prepare your pancake batter. Pour batter onto a hot griddle, aiming for thin, medium-sized pancakes that will fold easily into taco shells. Cook the pancakes in the large skillet until golden brown and set aside to keep warm. (Note, if your pancakes seem a bit too thick and heavy, just add a bit of milk or water to the batter to thin them out. You want them to be thin enough so that they're easy to fold, but hefty enough to hold the filling.

    1. Scramble the eggs. In a medium bowl, whisk the eggs. Cook over low-medium heat until they reach your desired level of creaminess. Soft and creamy eggs work best for this recipe.
    2. Assemble the tacos. The fun part!! Place a spoonful of scrambled eggs in the center of each pancake. Add slices of bacon and drizzle with maple syrup. Fold the pancakes into taco shapes and serve.

    Can I make these pancake tacos ahead of time?

    Yes, you can prepare the pancakes and bacon ahead of time and store them in an airtight container. I'd probably wait to make the eggs until just before you're ready to serve them. They don't take long and will taste much better fresh. Then just reheat the pancakes and bacon just before assembling the tacos.

    What's the best way to cook the bacon?

    Baking the bacon on a baking sheet in the oven is a great option because it's easy and the cleanup is minimal. However, you can also cook it on the stovetop or in the microwave.

    How can I make my pancakes fluffy?

    Fluffy homemade pancakes are not a myth! Using a good pancake recipe with buttermilk and ensuring your batter isn't over-mixed will help. Cook on medium-high heat for the best results. (I love this pancake recipe from the NYT.)

    Can I add other toppings to my pancake tacos?

    How do I get the tacos to hold their shape?

    The easiest way I've found to do this is by using a taco holder. It's a small zig-zag-shaped tool that allows you to place your tacos right inside, letting them stand on their own without falling over.

    • 16 pancakes
    • 1 lb bacon
    • 12 large eggs
    • 8 tablespoon maple syrup

    Instructions
     

    • Make the bacon. I like to make my bacon in the oven, as it's easy to clean up when you're done, and you can cook it while you cook the eggs and pancakes. (And the bacon comes out perfectly every time!) But, you can make the bacon on the stovetop or even in the microwave if that's easier for you.
    • Make the pancakes. Try to make these thin enough and big enough that they are easily able to fold into a taco and hold the filling. Set aside and keep warm.
    • Make the scrambled eggs. Everyone likes their eggs a bit differently, but I prefer mine soft and creamy. (Learn how to make perfectly cream scrambled eggs here.)
    • Assemble your tacos. Once everything is cooked, stuff each taco with a spoonful of scrambled eggs, and slices of bacon. Drizzle a ½ tablespoon of maple syrup over the top and serve.

    Notes

    • Try to make the pancakes a bit thin to make them easy to fold 
    • Baking the bacon in the oven allows for easy cleanup and also lets you make the pancakes and the eggs while the bacon is cooking. 
    • Customize by adding other savory ingredients, or make these sweet instead, using fruit, chocolate chips, sour cream, or creme fraiche.
