Why This Recipe Works
There are so many reasons this recipe is a winner.
- Hearty breakfast option. Ok, I won't tell you that this is the healthiest option out there, but if it's a filling delicious breakfast you're after, this is it. This recipe brings together the best of breakfast ingredients in one delicious package. The combination of juicy steak, fluffy folded eggs, and melted cheese nestled between freshly toasted bagels is a surefire way to satisfy your morning cravings.
- The breakfast sauce. This homemade breakfast sauce is an improvement on McDonald's beloved sauce, adding a touch of spice to elevate the flavor.
- Easy. Don't be intimidated by the addition of the steak to this sandwich. Thinly sliced, or shaved steak cooks quickly on a skillet and you can use the same pan to make the scrambled eggs, making this a quick and easy breakfast recipe.
- Better than fast food. I won't lie - I love McDonalds. But if it's quality food you're after, this McDonald's copycat recipe has the fast food chain beat hands down. I love that I get to choose the quality of the ingredients I use, the creaminess of my eggs, and the doneness of my steak. Plus, the smoked cheddar cheese used here is such an upgrade from the regular American cheese that's used on Mcdonald's steak egg and cheese sandwich.
Key Ingredients
The ingredient list here is short and sweet. Here's what you'll need:
- Ribeye steak. Ribeye is a great cut for this type of sandwich, since it tends to be a bit more tender than other cuts of meat. Make sure it's thinly sliced or shaved for quick cooking and maximum tenderness.
- Eggs. Whisked and scrambled to fluffy perfection.
- Smoked cheddar cheese. I love this cheese over American, as it adds a rich and smoky flavor that really takes the sandwich to the next level.
- Plain bagels. The perfect base for building your breakfast sandwiches.
- Breakfast sauce. A zesty blend of mayo, sriracha, Worcestershire sauce, and seasoning to tie everything together.
How To Make A Steak Egg And Cheese Bagel
- Prepare the breakfast sauce. In a bowl, mix mayo, sriracha, Worcestershire sauce, and salt. Set aside.
- Cook the steak. In a large nonstick skillet over medium heat, cook the thinly sliced ribeye steak for a few minutes on each side until browned. Remove and cover with foil.
- Scramble the eggs. In the same skillet, add a tablespoon of butter. Add the eggs to the melted butter and scramble the eggs over low heat until soft and creamy. (Learn how to make creamy scrambled eggs here!)
- Toast the bagels. While the eggs are cooking, toast the plain bagels until golden brown.
- Assemble the sandwiches. Spread the breakfast sauce on the cut sides of the bagels. Layer one side with steak, scrambled eggs, and a slice of cheese. Top with the remaining bagel half.
- Serve. Dig into your homemade Steak Egg and Cheese Bagel Sandwiches and enjoy!
Variations And Substitutions
There are lots of ways you can customize these breakfast bagel sandwiches. Here are a few ideas:
- Grilled onions. Add a layer of flavor with grilled onions.
- Hollandaise sauce. For a decadent twist, drizzle hollandaise sauce over the steak and eggs.
- Leftover steak. Use leftover steak for a quick and easy breakfast option. You can even use a juicy steak patty to more closely resemble McDonalds steak egg and cheese sandwich.
- Different cheese. Swap out the smoked cheddar for your favorite cheese variety. (Just make sure you use a melty cheese!)
- Season the eggs. Add a touch of black pepper or garlic powder to the beaten eggs to add a bit more flavor to the sandwich.
- Change the bagel. Using a plain bagel here really lets the flavors of the sandwich shine, but you could easily substitute it for an Everything Bagel, a Salt Bagel, or an Onion Bagel.
Frequently Asked Questions
Absolutely! The breakfast sauce can be prepared in advance and stored in an airtight container in the refrigerator for up to a week.
I love to add this breakfast sauce to any type of breakfast sandwich, but you can also use it in burritos or with breakfast potatoes.
While ribeye steak is recommended for its tenderness and flavor, you can certainly use other cuts such as sirloin or flank steak.
While these sandwiches are best enjoyed fresh, you can prepare the individual components ahead of time and assemble them when ready to eat for a quick and easy breakfast option.
Not quite. While no one is exactly sure what the recipe for McDonald's famous sauce is, it doesn't contain as much heat as this one does. Some speculate the original contains mustard and steak sauce, and maybe a dash of dill. I actually prefer this breakfast sauce as I think it really compliments the hearty steak sandwich and I love the added spice.
McDonald's sandwich uses a fluffy folded egg, almost like an omelet, for its breakfast bagels. But, while a bit messier, I love the texture of the soft creamy scrambled eggs made in this recipe.
The secret to great soft and creamy scrambled eggs is in the cooking method. Cook over low heat, and stir slowly with a rubber spatula until they are just barely done. Remove from heat and add them to your breakfast sandwich.

Steak Egg And Cheese Bagel Recipe With Breakfast Sauce
Ingredients
For the breakfast sauce
- ½ cup mayonaisse
- 1 tablespoon sriracha or hot sauce
- 2 teaspoon Worcestershire sauce
- salt to taste
For the steak egg and cheese bagel
- 1 lb thinly sliced or shaved steak (I used ribeye)
- ½ tablespoon butter
- 8 large eggs (2 per sandwich)
- 4 plain bagels
- 4 slices smoked cheddar cheese
Instructions
- Create the breakfast sauce by mixing all the ingredients in a bowl. Set aside.
- In a large skillet over medium heat, cook the ribeye steak for about 2 minutes. Flip the steak and cook an additional 1-2 minutes. Remove the steak from the pan and cover with foil to keep warm. Wipe the pan clean.
- Whisk the eggs in a medium bowl. In the same skillet you used to cook the steak, add the eggs and scramble over low heat until soft and creamy (learn how to make soft and creamy scrambled eggs here!).
- While the eggs are cooking, toast the bagels.
- Assemble the sandwich by spreading the breakfast sauce on the cut sides of the freshly toasted bagel. Top one side with the steak, then the scrambled egg. Add the slice of smoked cheddar cheese slices to the top of the egg. Top with the remaining bagel half and serve.
Notes
- Use quality ingredients! The big advantage this sandwich has over the McDonald's breakfast sandwich is that it uses high-quality ingredients. Choose a good cut of steak, and a good, melty cheese, and make your eggs with care (nice and creamy!) for the best results.
- Best enjoyed immediately.

Loved this recipe! The steak was juicy and the cheese was perfectly melted. I added some grilled onions as suggested and it really elevated the taste. So yummy! This is now my go-to weekend breakfast.

This was ok but NOTHING compares to McDonald's breakfast sauce. Ihave been trying for years to copy their exact sauce with no success. There are so many "copycat recipes" out there but none come even close to the riçh garlicky taste of their sauce. Now these sandwich would have them beat in all other areas but they still need McDonald's breakfast sauce as there is nothing that can replace it.
