Make the bagel dough by mixing the salt, yeast, flour water and honey in a bowl.
Allow the dough to rise for 3.5-3 hours.
Divid the dough into balls, then shape each ball into a ring by poking a hole in the middle. Allow the rings to rise overnight.
Boil the bagels in water with baking soda for 1-2 minutes, then place on a baking tray lined with parchment paper, and sprinkle with coarse sea salt.
Bake the bagels for 8 minutes, then rotate and bake for an additional 8-12 minutes. Remove from the oven then allow to rest for 30 minutes.
Use the float test to make sure your bagels are ready to boil. Place one in a bowl of cold water. If it sinks, place it back on the baking sheet and wait 15 minutes and try again. If it floats, it's ready.
