BBQ Chicken is a favorite at our house. We do it on the grill, in a BBQ chicken flatbread, with wings, shredded in a crockpot, or BBQ chicken in the Instant Pot, but one of my favorite ways to make it is in the oven. My kids ask for these crispy drumsticks almost weekly. They're easy enough for a school night but versatile enough that I make them year-round (the benefit of not having to use the grill if I don't want to freeze!).
I like to add a chopped salad and roasted baby potatoes in the summer, or maple Brussels sprouts and cheesy mashed potatoes once it's cooler out. Either way, everybody's always happy when these are on the table.

The ingredients here are simple. Here are a few things worth calling out:

- Chicken drumsticks. This recipe uses about 2½ pounds, or 8 medium drumsticks. Pat them completely dry before adding the oil and seasonings. Removing that surface moisture helps the skin brown instead of steam, which can lead to a rubbery texture.
- Brown sugar. It's part of the dry rub and helps everything caramelize, but it's also exactly why the sauce doesn't go on until the chicken is mostly cooked. Too early and it scorches under the broiler.
- Smoked paprika. Does a lot of the color and flavor work in the rub. Regular paprika can also work if you don't have smoked.
- BBQ sauce. Use a bottled sauce you already like-we're big fans of Sweet Baby Ray's. A little apple cider vinegar thins the sauce and balances its sweetness. Reserve some of the sauce in a separate clean bowl if you'd like extra for serving.
How Long To Bake BBQ Chicken Drumsticks
At 425°F, medium chicken drumsticks generally take 35 to 45 minutes to reach 165°F, followed by a brief broiler finish after the sauce is added. Check the temperature in the thickest part of the meat without touching the bone. Although 165°F is the safe minimum temperature for chicken, dark meat is often more tender when it reaches 175 to 185°F.
Just remember the exact time will depend on the size of the drumsticks and your oven, so use an instant-read thermometer rather than relying on the clock alone.
How to make Oven Baked BBQ Chicken Drumsticks

Step 1: Season the chicken.
Pat the drumsticks very dry with paper towels and place them in a large bowl. (Drying the chicken thoroughly is one of the most important steps here; skip it and you're fighting rubbery skin the rest of the way.) Drizzle with olive oil. In a small bowl, mix the salt, smoked paprika, garlic powder, onion powder, chili powder, brown sugar, black pepper, dry mustard, and cayenne, if using. Sprinkle the mixture over the chicken and rub it over all sides.

Step 2: Prepare the pan and arrange the drumsticks
Line a rimmed baking sheet with foil (helps with spills), set a wire rack on top, and arrange the drumsticks in a single layer without touching. The rack is ideal since it lets hot air circulate underneath so the skin crisps instead of steaming. But if you don't have a wire rack, the baking sheet alone works too; just flip the drumsticks more often.
Place the seasoned drumsticks on the prepared rack in a single layer, leaving a little space between them so they brown evenly.

Step 3: Bake the Chicken
Bake the chicken at 425°F for 30 to 35 minutes, flipping once halfway through, until the thickest drumstick reaches at least 165°F and the skin is browned. Hold off on the sauce here. The brown sugar in the rub needs time to set and get all caramel-y and sauce this early can scorch before the chicken's done.

Step 4: Prepare and add the BBQ sauce
Stir the BBQ sauce with the apple cider vinegar and set aside ¼ cup for serving. At about the pull the pan and brush the drumsticks lightly with sauce on all sides. You may think that a thicker spread of sauce is the way to go, but trust me when I say start with a thin layer first. Too much sauce at once pools on the pan and burns before it sets.

Step 5: Finish under the broiler
Switch the oven to high broil. Return the pan to the oven and broil for 3 to 4 minutes, watching closely, until the glaze is sticky and lightly caramelized. Brush on a second thin coat from the glazing sauce and broil for another 1 to 2 minutes, if desired.
(This is the step to stay close for since broilers vary and sauce can go from caramelized to burnt very, very fast. Pull the drumsticks as soon as the sauce looks tacky with a few darker spots.)

Step 6: Rest and Serve
Transfer the drumsticks to a platter and let them rest for 5 minutes. Serve with the reserved clean BBQ sauce, if you want.
Expert Tips
I've made this recipe many times. Here are a few tricks to get the perfect glaze while keeping the inside moist and tender!
- Use a thermometer, not just the clock. Drumsticks vary considerably in size. Check the thickest part of the meat without touching the bone.
- Use a wire rack if you have one. It's the difference between crispy skin and skin that steams in its own juices.
- Let dark meat cook beyond the minimum when possible. For fall-off-the-bone dark meat, aim higher than you'd think. 175 to 185°F internally gets you tender drumsticks, not just safely cooked ones.
- Leave space between the drumsticks. Crowding the pan traps steam and prevents the skin from browning. If you double the recipe, divide the chicken between two pans.
- Double the batch for a crowd. These reheat well and scale up easily on one sheet pan, or two if you're feeding more people.

Make Ahead, Storage, Freezing, and Reheating
- Make ahead: Season the chicken up to 24 hours in advance and store it covered in the refrigerator. Bake it directly from the refrigerator, allowing a few additional minutes if needed.
- Storage: Let leftover drumsticks cool, then refrigerate them in an airtight container for up to 4 days.
- Freezing: Freeze cooled drumsticks in an airtight, freezer-safe container for up to 3 months. Thaw them overnight in the refrigerator before reheating.
- Reheating: Reheat the drumsticks in a 350°F oven or in the air fryer until hot, and the center reaches 165°F. The microwave also works, but the exterior will be softer.
What to Serve With Oven Baked BBQ Chicken Drumsticks
For a summer spread, my favorites are Air Fried French Fries or Roasted Baby Potatoes, and a simple salad like the peach salad shown below or my Chopped Mediterranean Cucumber and Tomato Salad.

For something a little heartier in cooler months, I like serving the drumsticks with Roasted Maple Brussels Sprouts, Boursin Cheese Mashed Potatoes, and Garlic Green Beans, or Roasted Lemon Asparagus.
