Mix the maple syrup, lime juice, oil and pepitas in a bowl. Stir to coat the peptias well.
Add the pepitas to a baking sheet lined with parchment paper.
Sprinkle the spice mixture over the pepitas and stir well to coat.
Spread the pepitas out evenly for baking and bake at 350 degrees for 10-15 minutes.
Stir the pepitas every 5 minutes to ensure even roasting on both sides.
