Start by cutting the tops of the garlic head off to expose the cloves.
Pour olive oil over the tops of the garlic cloves and wrap tightly with aluminum foil.
Roast the garlic in the oven at 400 degrees for about 45 mintues.
Remove the garlic from the oven, allow to cool, then squeeze the roasted cloves out of the head into a bowl.
Add some additional oil to the garlic and mash it in the bowl. Add salt and pepper to taste. Add Parmesan cheese and crushed red pepper flakes if desired.
Serve roasted garlic with some crusty bread, or add to soups, salad dressings, or pastas for a delicious mild garlic flavor.
