These Crispy And Cheesy Fried Mashed Potato Balls are loaded with crispy bacon, creamy potatoes,  melty cheese, green onions, and spicy jalapeños, then coated with panko breadcrumbs and fried until crispy and golden brown.

Key Ingredients

-Leftover mashed potatoes -Cheese -Green onions -Eggs -Bacon -Panko bread crumbs -Salt and pepper

Take the mashed potatoes out of the fridge and allow to come to room temperature.

Mix the mashed potatoes with the jalapeno pepper, cheese, green onion, bacon and salt and pepper. Form into small 1/2 inch balls.

Whisk the egg and place the the Panko bread crumbs in a large bowl. Dip the mashed potato balls in the egg, then roll in the Panko bread crumbs.

Fry the leftover mashed potato balls in hot oil until golden brown, flipping to make sure each side cooks evenly.

Serve hot with your choice of dipping sauce (ranch dip is a favorite!).
