Drain or squeeze the moisture out of the shredded zucchini.
Mix the wet ingredients and dry ingredients in separate bowls.
Mix everything together in a large bowl and add the zucchini, chocolate chips, and walnuts.
Fill the muffin tin about 3/4 of the way full. and place in the oven.
Bake the muffins for 20-25 minutes.
Allow the muffins to cool for 5 minutes on a cooling rack. Enjoy!
