    Blackberry Creamsicles

    Blackberry Creamsicles make the perfect summer treat! Juicy blackberries dashed with a spritz of lime juice are mixed with rich vanilla yogurt and cream to make the ultimate warm-weather dessert.

    Well, we're just a few weeks into summer and already it's been 90+ for almost two weeks here on the front range. Whaaat??  It's like we jumped straight from snow to hellish hot here in Colorado this year, and it doesn't look like it's going to let up anytime soon. We're finding any and every way to cool ourselves down, which is why these blackberry creamsicles are on repeat at our house right now.

    How To Make These Delicious Creamsicles

    These blackberry creamsicles are easy to make and a great activity to do with kids! Here's how to whip these frozen treats up.

    1. Cook the blackberries (along with a bit of honey and a splash of lime) down to almost a syrupy consistency. This adds some nice texture and also really concentrates the blackberry flavor. Don't be scared to keep some small blackberry chunks in there. They make for great surprises when you're biting into these creamsicles. 
    2. Once the berries are finished and have cooled, you can add a couple of tablespoons of the blackberry syrup, along with yogurt, cream, and honey to a mixer and blend until everything is nice and creamy. (Adding a little of the blackberry mixture not only gives the overall creamsicle a bit more of a consistent blackberry taste, but it gives them that beautiful lavender color too.) 
    3. Finally, layer the yogurt mixture and the blackberry syrup into popsicle molds. Then, add your sticks and freeze for 2 hours, or until completely frozen.

    They're the perfect straight-from-the-freezer treat. In fact, my kids have been devouring them after afternoons working up an appetite at the pool. 

    How Long Will These Last In The Freezer?

    Your creamsicles should be good for about 2 months in the freezer - if they last that long!

    Variations

    Not a blackberry fan? Try these with any other type of fruit. Strawberry, blueberry, or orange would also be amazing here.  

    You could also try making these vegan by subbing in full fat coconut milk for the cream and yogurt. In that case, you may also just want to add a splash of vanilla for taste.

    Ingredients
      

    • 8 oz fresh blackberries
    • 2 tablespoon water
    • 3 tablespoon honey
    • 1 teaspoon lime juice
    • 1 cup vanilla yogurt
    • 1 cup heavy cream

    Instructions
     

    • Heat the blackberries, water, lime juice, and 2 Tablespoons of the honey over low heat, muddling the blackberries occasionally until they break down and until the mixture starts to thicken - about 30-45 minutes.

    • Once the blackberry mixture is cool, spoon 2-3 tablespoons of it into the yogurt mixture, reserving the rest. 
    • Pour a small amount of the yogurt mixture into the popsicle molds. Layer in the blackberry sauce, followed by more yogurt mixture until the molds are full.
    • Add your popsicle stick and place in the freezer until frozen, about 2 hours.

      The only thing that I would change is to seed the blackberries (same for raspberries). I still remember when I first made my mom a blackberry milkshake years ago and she stuck out her tongue covered with seeds and said "Glenn, no!"

      I'm not a huge fan of blackberries, so I tried this recipe with strawberries instead. It was perfect! The sweetness was just right, and it turned out so good with the layers of yogurt and fruit. My kids loved it!

      Making these creamsicles with my kids was the highlight of our week! We laughed, made a mess, and ended up with the most delicious frozen treats. My youngest, who's usually a picky eater, couldn't get enough of them. It's amazing how involving them in the cooking process can make them more excited to try new foods.
