Why Sheet Pan Pancakes (using pancake mix) are the Perfect Breakfast Solution
If you're looking for an easy and delicious breakfast idea that can feed a large group of people, sheet pan pancakes are the perfect solution. Here's why they're a favorite of ours.
- They're super easy and cost-effective. Instead of standing over a hot stove flipping individual pancakes, you can make an entire batch of pancakes at once in the oven, making these flapjacks mostly hands-off. Less mess and less fuss? Already sold. This method also saves money by bundling everything in one box, and, especially with mixes like Kodiak Cakes, adds protein, whole grains, and great flavor for an easy sheet pan breakfast.
- Quick. No joke, these oven-baked pancakes can be made in 15 minutes. The prep is almost zero, and then everything just cooks at once in the oven.
- Customizable. I love making the base of these sheet pan pancakes from a store-bought Kodiak pancake mix, but after that, the sky's the limit. You can add whatever your heart desires to these delicious sheet pan pancakes. Fruit, chocolate, bacon, cheese - the choices are endless. And, because you make everything in a large sheet pan, you can even section off portions of the pan for specific ingredients if you have picky eaters on your hands.
- You can make them ahead of time. While you wouldn't want to make the pancake batter too far ahead, you could make the entire batch of sheet pan pancakes from mix ahead of time and just heat them quickly in the microwave before serving.
- Great for a crowd. This dish is a great option when you're feeding a group of people. After all, no one wants to be standing over a hot stove all morning when you have company! We love serving them with this easy oven-baked bacon, easy air fryer breakfast potatoes, savory oatmeal, egg muffins Cups, perfect jammy eggs, or creamy scrambled eggs.
- They freeze really well. You know those mornings when you're trying to rush out the door and need something quick? Sheet pan pancakes to the rescue! Just take them from the freezer straight to the microwave for a quick and tasty start to your morning.
Key Ingredients
To make these easy pan pancakes, you'll need a few basic ingredients:

- Pancake mix. You can use any type of pancake mix you like, but I love Kodiak Cakes. This mix is made with whole grains and has a delicious, nutty flavor. Plus, Kodiak pancake mix is loaded with protein. Using milk and eggs as your mix-ins, you'll get a whopping 18 grams of protein per serving. This makes me feel just a little bit less guilty about indulging in pancakes for breakfast.
- Eggs. Eggs will help bind the pancake batter together and make it fluffy.
- Milk. Milk adds moisture to the pancake batter and helps the pancakes cook evenly.
- Oil or butter. You'll need a little oil or butter to grease the sheet pan and prevent the pancakes from sticking.
- Toppings/Add-ins. You can use any toppings you like, such as fresh fruit, chocolate chips, or nuts. I used strawberries, blueberries, and chocolate chips here. If you're looking to make these really decadent, add some strawberry cake filling or some warmed chocolate sauce to the top!

Customize Your Pancakes With Delicious Add-Ins!
One of the best things about sheet pan pancakes is that you can customize them with any toppings and add-ins you like. Just add these ingredients right into the batter on the sheet pan before baking the pancakes in the oven.
Here are a few ideas to get you started:
- Fresh fruit. Add sliced strawberries, blueberries, bananas, or any other fruit you like to your pancakes. You can even mix different fruits together for a colorful and flavorful breakfast. Dried fruit or coconut works here, too!
- Chocolate chips. Who doesn't love chocolate for breakfast? Sprinkle chocolate chips on top of your pancake batter before baking for a decadent treat.
- Don't forget about spices. Adding a touch of cinnamon or nutmeg can enhance the taste of your pancakes, depending on the flavor you're after.
- Try a different topping. While traditional toppings like butter and syrup are always a hit, you can get creative by trying out different fruit compotes or spreads like Nutella or peanut butter. You can also sprinkle toppings like powdered sugar, chopped nuts, or even bacon bits on top of your pancakes to add extra flavor and texture.
- Nuts. Add some crunch to your pancakes by sprinkling chopped nuts on top. Pecans, walnuts, and almonds all work well.
- Bacon. If you like savory breakfasts, try adding crumbled bacon to your pancakes. The salty flavor pairs perfectly with sweet maple syrup.
- Cheese. Yes - you heard it here first! Cheesy pancakes are great when you don't want something overly sweet. Add that bacon to them, and you've got a winner!
- Try different boxed mixes. You can also experiment with different pancake mix flavors to create unique and delicious pancakes. For example, try using a cinnamon-flavored mix for a cozy fall breakfast or a chocolate-flavored mix for a special
How To Make Sheet Pan Pancakes From Kodiak Mix
Here's a step-by-step guide for making these sheet pan pancakes from mix:

Step 1: Grease Your Pan & Prepare Your Pancake Mix. Preheat your oven to 425°F and grease a 13x18-inch sheet pan with cooking spray or melted butter.
(Expert Tip - if using butter, just place it directly on your pan and pop your pan into the preheating oven for a few minutes. The butter will melt perfectly, and you can just swirl it around a bit to coat the pan. If using this method, just be sure to watch it closely and take it out before the butter burns!)
In a large bowl, whisk together the pancake mix, eggs, and milk, until well combined.

Step 2: Spread the pancake batter in the pan. Pour the batter onto the prepared sheet pan and spread it out evenly with a spatula.

Step 3: Add some toppings. Add your toppings to the pancake batter. (I used blueberries, strawberries, and a few chocolate chips.) Just sprinkle these add-ins directly over the batter after you've spread it into the sheet pan.

Step 4: Bake. Bake the pancakes in the oven for about 12 minutes or until the pancakes are golden brown and cooked through.

Step 5: Cut and serve. To serve, cut the pancakes into squares and serve with your favorite toppings.
Expert Tips For Making The Best Sheet Pan Pancakes Using A Mix
Making these oven-baked sheet pan pancakes is easy, but there are a few tips you should keep in mind to ensure that they turn out perfectly every time.
- Grease your pan. First, make sure that your pan is well-greased with cooking spray or butter to prevent the pancakes from sticking. You can also line the sheet pan with parchment paper for easy cleanup.
- Spread the batter evenly. Second, be sure to spread the pancake batter out evenly on the sheet pan. This will ensure that the pancakes cook evenly and are the same thickness. If your batter is too thick to spread easily, you can add a little extra water to thin it out.
- Don't overcook! Don't overcook your pancakes. The sheet pan pancakes should be golden brown and cooked through, but not dry or burnt. Keep an eye on them in the oven and take them out as soon as they're done.
- Section off your pancakes! Have some picky eaters in your group? Making pancakes this way allows you to customize them for everyone by only adding specific toppings to certain sections of the batter in the pan!

Yes! This is a great recipe to make ahead of time. You can store the cooked pancakes in the fridge for 3-4 days in an airtight container, then reheat them when you're ready to serve them.
I love Kodiak pancake mix since it has a bit more protein (and even gives you ideas on the package of how to get more protein by adding additional eggs and milk!). However, other common pancake mixes like Bisquick or Krusteaze would work great too. Feel free to use your favorite.
Freezing And Reheating Instructions
Sheet pan pancakes from mix freeze up wonderfully and make for a super easy breakfast on busy mornings. To freeze, allow the pancakes to cool completely, and slice them into easy-to-store squares. Place the square pancakes in an airtight ziplock bag, making sure to squeeze out any excess air. They'll keep for about 3 months in the freezer.
To reheat this easy breakfast, align the square-cut pancakes evenly on a large plate and heat them in the microwave for about 1 - 1 ½ minutes (this will depend on how many you are reheating at a time). If reheating from frozen, you may need an extra minute or so.

Recipe

Sheet Pan Pancakes From Mix
Ingredients
- 2 ½ cups Kodiak Cakes pancake mix (or another mix like Bisquick or Krusteaz)
- dash of cinnamon (optional)
- 2 eggs
- 2 cups milk
- 1 tablespoon oil or butter, melted
- toppings of your choice - I used strawberries, blueberries, and chocolate chips
Instructions
- Preheat your oven to 425 degrees.
- Grease your pan with oil, or melted butter. (I like to place the butter on my pan, then put it in the preheating oven for 2-3 minutes to melt. Swirl the butter around the pan to coat it.)
- In a large bowl, add the pancake mix, a dash of cinnamon (if using), eggs, and milk. Mix until just combined.
- Pour the pancake batter into your prepared sheet pan and spread it evenly across the pan with a spatula. Then top with your choice of add-ins (just sprinkle them right on top of the batter). Strawberries, blueberries, and chocolate chips are a delicious combination!
- Bake the pancakes for 12-14 minutes. You'll know the pancakes are done when you stick a toothpick in the center and it comes out clean. The pancakes should be a very light, golden brown. Be careful not to overcook!
- Cut the sheet pan pancakes into squares and serve with your choice of toppings: syrup, honey, peanut butter, powdered sugar, etc.
Notes
- To prevent the pancakes from sticking, spray your pan with cooking spray or grease the pan with butter. I like to place a tablespoon of butter on my sheet pan and put it in the oven while it's pre-heating. The butter will melt in the oven, then you can just spread it around on the pan before adding your mix.
- This recipe fits a 13x18x1-inch pan.
- Spread the batter evenly to ensure the same thickness across the pan.
- Watch the pancakes carefully to make sure they don't overcook. You'll know they're done when you can insert a knife or toothpick in the center and it comes out clean.

I made this recipe with the Kodiak Power Cake Flapjacks & Waffle Mix in the chocolate chip flavor with no substitutions to the recipe. It turned out perfectly! I didn’t add any toppings on top; I just served fruit on the side. This is such a great hack. No standing by the griddle and flipping pancakes forever. They cut into perfect little brownie squares. My kids (3, 5, 7) all loved it. It was also delicious the next day.

Thank you!

Delicious!! Wound up cooking an extra 10 minutes or so for consistent cooking. Added 2 scoops of protein powder for an extra 40 grams of protein, and it was perfect and hubby approved!!
Sarah Jenkins says
Awesome! Love the added protein powder!

I made the recipe using 2 ripe bananas and 1/2 cup Greek Yogurt in place of the eggs (1 banana per egg, but I only had 2 bananas so also use 1/4 cup yogurt per egg - i doubled the recipe and needed 4 eggs total) i also used Silk almond milk in place of regular milk. I used a large cooking sheet (bought at costco). We put frozen blueberries for the topping added 5-6 extra mins to the timer to compensate for the cold fruit. Pancakes came out fluffy and beautiful. Taste great. I made a large amount, so I could have the pancakes for the week.
Sarah Jenkins says
That's excellent! I'm glad to hear that those modifications worked for you!!
Nikki says
So much easier and it’s so delicious! I used regular pancakes mix and added vanilla extract. This time I used chocolate chips. I could have taken them out at 10min probably. They weren’t dry or overbaked at 12min, but could go with little less time. I used large sheet pan. Thanks so much for this foolproof recipe!
Sarah Jenkins says
Thanks Nikki! So glad you loved them!! They are a game changer at our house!
Brittany G says
So I do not have a 13x18 sheet pan but I do have a 9x13 and an 8x8, do you think I could still follow this recipe splitting the batter between the two pans?
Sarah Jenkins says
Hi Brittany,
I haven't tried it this way so can't say for sure, but that might work! You'd probably need to lessen the baking time a bit due to the smaller pans. Let me know how it turns out!
Tom Wiegand says
Super easy way to make pancakes for the family. Doing it this way lets me focus on the bacon and eggs. I do suggest checking them as 7 or 8 minutes in.
Sarah Jenkins says
Thanks Tom! Glad they worked for you - I love how easy this method makes it!
Abby Rhoads says
We love these so much and have great results using parchment paper on the cookie sheet. Do you know what the serving size would be in grams or ounces? Thanks!
Sarah Jenkins says
Hi Abby,
I'm sorry - I don't! I usually just divide the recipe into 8 equal pieces but am unsure how that works out to grams.
