These crispy country potatoes are one of my new favorite breakfast dishes, with soft, creamy centers, crispy on the outside, and served with onions and bell peppers - they're just like how your favorite diner serves them. These easy breakfast potatoes are the perfect side dish for a hearty breakfast, including ultra creamy scrambled eggs, steak egg and cheese bagels, or my delicious quiche florentine. - Perfect texture. Air frying is a game-changer for making the best breakfast potatoes, and, IMHO, the best way to cook them. It allows you to achieve that coveted crispy exterior without drowning your potatoes in oil. The high heat and circulating air in the air fryer ensure even cooking, resulting in the perfect texture that's crispy around the edges and perfectly tender on the inside. - Yukon Gold potatoes. You could use any kind of potato you wish, but I love Yukon Gold potatoes because of their creamy texture and buttery flavor.
- Bell peppers and onions. The red and green bell pepper, combined with diced onions, adds a burst of color and a sweet, savory flavor to the potatoes. I used yellow onions for a sweeter flavor, but red onions will work too.
- Neutral oil. Use a neutral oil here (not olive oil) so that your simple ingredients shine through. I used Grapeseed oil, but you could also use avocado oil, canola oil, or vegetable oil for this simple recipe.
- Salt and black pepper. Simple yet essential, these seasonings bring out the natural flavors of the potatoes and peppers and add just a touch more flavor.
Variations and Substitutions
As is, this recipe for air fryer country potatoes is super versatile and could be used in all sorts of recipes. But you can change it up based on what you're serving or how you're using the potatoes.
- Add different seasonings. Add a dash of garlic powder, onion powder, paprika, chili powder, cayanne pepper, or even Cajun seasoning for a different, spicer take.
- Add some fresh herbs. Adding some chopped fresh herbs to these after they've finished cooking can be a great way to add some fresh flavor to the potatoes.

How To Make Air Fryer Breakfast Potatoes

Step 1: Chop the potatoes and veggies. Dice 3 lbs of Yukon Gold potatoes into small, ½-inch cubes. Dice 1 red pepper, 1 green pepper, and 1 yellow onion.

Step 2: Toss the potatoes and veggies with oil. Add the cubed potatoes, bell peppers, and onions to a large bowl. Toss the diced vegetables in oil, ensuring they're evenly coated. Add salt and pepper to taste.

Step 3: Air fry the breakfast potatoes. Add the diced potatoes, onion, and bell pepper mixture to your air fryer basket in a single layer. (Don't crowd your basket - work in batches if you need to!) Air fry the breakfast potatoes at 400° for 10 minutes. Shake the basket, then return for 5 minutes. Repeat until the potatoes are crispy around the edges and are golden brown.

- Don't crowd the air fryer basket. Placing too many potatoes in the basket will cause them to steam instead of air-fry, resulting in soggy potatoes. To achieve maximum crispiness, add the potatoes in a single layer. Work in batches if you need to.
- Cooking time may vary. Depending on how big you cut your potatoes, you may need to increase or decrease your cooking time. Just try to cut the potatoes the same size to ensure even cooking.

Absolutely! Simply toss the seasoned potatoes in a preheated oven at 400 degrees for a crispy alternative.
No! In fact, I prefer to leave the skin on. I love how the skin gets extra crispy. Plus, the skin of a potato is super good for you - there are actually more nutrients in the skin than in the interior of the potato if you can believe it. (Also, it just makes this recipe even easier!)
For some recipes, I do like to soak the potatoes first to help remove some of the excess starch, which helps prevent browning and makes them extra crispy when roasting. However, it's not always necessary, and I found that with this recipe, since the potatoes were cut small, they crisp up well without the soaking. (Win!)
This may have happened for a couple of reasons. First, for best results, you need to make sure you don't try to air fry too many potatoes at once. They need room for the hot air to circulate throughout the air fryer basket. Second, be sure you shake the basket at the 10-minute mark so that the potatoes cook evenly. If you find your breakfast potatoes are still not crispy at 15 minutes, simply shake them again and cook for an additional 5 minutes. Repeat until you reach your desired level of crispiness!

Storage And Reheating
Allow the potatoes to cool completely before storing them in an airtight container for about 5 days.
To reheat, roast them in the oven for about 10 minutes at 350°, or reheat them in the air fryer for about 10 minutes at 350° to help them regain their original crispiness.

Crispy Air Fryer Breakfast Potatoes (Country Potatoes)
Ingredients
- 3 lbs yukon gold potatoes diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 yellow onion diced
- 1 tablespoon neutral oil (grapeseed, avocado, or vegetable oil all work)
- salt and pepper to taste
Instructions
- Preheat your air fryer to 400 degrees.
- Prepare your potatoes by cutting them into ½ inch cubes. Dice the red and green bell pepper and onion.
- Add the potatoes, peppers, and onions to a large bowl. Add the oil and toss to coat. Season with salt and pepper to taste.
- Place the potato cubes, peppers and onions in your air fryer basket, being careful not to fill your basket too full (work in batches if you feel you have too many potatoes.) Air fry the breakfast potatoes for 10 minutes. Give them a good shake, then return to the air fryer for an additional 5 minutes. If needed, Shake again, and air fry for 5 more minutes, or until the potatoes are crispy around the edges and golden brown.
Notes
- Don't crowd the air fryer basket - if you add too many diced potatoes there won't be enough room for the hot air to circulate for them to get crispy. Cook in batches if your air fryer is too small.
- Don't forget to shake the potatoes at the 10-minute mark. This will help them all cook more evenly and become crispy.
- Serve with creamy scrambled eggs and oven-cooked bacon, french toast casserole, or any other breakfast dish.
