--Yukon gold potatoes -Red bell pepper -Green bell pepper -Yellow onion -Oil -Salt & pepper to taste

Ingredients
Prepare the veggies. Cut the potatoes into 1/2 inch cubes. Dice the red and green bell peppers and the onions.
Season. Add the potatoes, onions and peppers to a large bowl. Toss with the oil to coat and sprinkle with salt and pepper to taste.
Air Fry. Add the breakfast potatoes to the basket of your air fryer. Air fry the potatoes for 10 minutes, give them a good shake, then continue air frying for an additional 5-10 minutes, until crispy.
Don't fill the basket too full! If you're working with a large amount, work in batches to ensure the potatoes have enough room to cook evenly. Top with an egg if desired.
