Meatloaf is a classic comfort food and a family favorite at our house. It's one of those things I crave when I'm feeling homesick, have had a rough day, or just want to eat a dinner that feels like wrapping a big chunky sweater around my shoulders. (Try my easy meatloaf recipe made with Lipton Onion Soup Mix, or this adorable Mini Meatloaf Recipe made in a muffin tin!!) But even the best meatloaf recipe in the world is nothing without a delicious tomatoey glaze to top it off.
The glaze is what makes it. This one comes together in five minutes - ketchup, brown sugar, a splash of vinegar, Worcestershire sauce, and some spices - and bakes into something sticky and caramelized that a plain meatloaf can't touch.

What's In A Classic Meatloaf Glaze Recipe?
A classic meatloaf glaze is usually made with a tomato base, something sweet, and something tangy. The simplest 3-ingredient version uses ketchup, brown sugar, and either vinegar or Worcestershire sauce. My version builds on that classic combination with garlic powder, onion powder, and black pepper for a more savory, balanced glaze. This glaze is what gives a traditional meatloaf its signature sticky, glossy top.
Why You'll Love This Recipe
- Simple ingredients. The beauty of this classic meatloaf glaze recipe lies in its simplicity and perfect balance of flavors. The combination of ketchup, Worcestershire sauce, brown sugar, and aromatic spices creates a tangy-sweet glaze that adds extra moisture to your best meatloaf recipe and makes it taste delish.
- Easy addition. This glaze is simple to whip up while your meatloaf bakes - just toss all the ingredients into a bowl and whisk well. Adding the glaze towards the end of the cooking time ensures that it doesn't burn while allowing it to meld with the meatloaf for maximum flavor impact. The brown sugar caramelizes beautifully during baking, creating a deliciously sticky exterior.
- Works on everything. This glaze isn't a one-trick pony. Brush it on chicken thighs, meatballs, or pork tenderloin during the last 15-20 minutes of cooking. It's also excellent as a spread on Leftover Meatloaf Sandwiches!
Key Ingredients
One of the best parts of this delicious meatloaf glaze recipe is that you probably already have all the ingredients in your pantry. Here are the main ingredients you'll need:

- Ketchup. Provides the base for the classic glaze, adding a rich tomato flavor and a hint of sweetness.
- Brown sugar. Adds sweetness and helps to caramelize the glaze, creating a beautiful golden crust on the meatloaf once it has baked.
- White vinegar. The acid that balances the sweetness of the brown sugar. Apple cider vinegar is the most common substitute and works equally well - it's slightly milder with a faint fruitiness. Either works; use what you have.
- Worcestershire sauce. Contributes depth of flavor and a subtle umami kick to the glaze.
- Spices. Garlic powder, onion powder, and black pepper give the glaze a savory undertone and help balance out the sweetness of the brown sugar.
How To Make A Classic Meatloaf Glaze
Making this meatloaf sauce recipe is a breeze - you'll have it ready in less than 5 minutes!

Step 1: Combine ingredients. In a small bowl, combine ¾ cup of ketchup, 1 ½ teaspoons of white vinegar, 1 teaspoon of Worcestershire sauce, 2 ½ teaspoons of brown sugar, 1 teaspoon of garlic powder, ½ teaspoon of onion powder, and ¼ teaspoon of ground black pepper.

Step 2: Whisk. Whisk everything together until it's well combined. Make sure that the brown sugar is fully dissolved.

Step 3: Add to the meatloaf. Once your meatloaf has about 15-20 minutes of cooking time remaining, remove it from the oven and carefully spread the glaze evenly over the top of the loaf.

Step 4: Bake. Return the meatloaf to the oven and continue baking until the glaze is caramelized and the internal temperature of the meatloaf reaches 160°F (about 20 minutes). Allow the meatloaf to rest for about 10 minutes before slicing and serving.
When Should You Add The Glaze To The Meatloaf?
Add the glaze when the meatloaf has about 15-20 minutes of cooking time remaining. This gives it enough time to caramelize and set without burning. Applying it too early results in a scorched, bitter crust.
Variations And Substitutions
- Make it sweeter. For a sweeter meatloaf glaze, you can increase the amount of brown sugar according to your personal preference.
- Add some spice. Add a little heat to the meatloaf glaze by adding a tablespoon of Dijon mustard or a dash of chili sauce.
- Amp up the tang. If you prefer a tangier glaze, adjust the ratio of ketchup to vinegar to suit your taste. Or, add a tablespoon of BBQ sauce.
Easy Sides For Meatloaf
Meatloaf is one of those classic dishes that goes with tons of sides. Some of my favorites are mashed potatoes (I love these Boursin Cheese Mashed Potatoes, or this Garlicky Cauliflower Mash), a simple veggie side (like this Instant Pot Steamed Broccoli or Maple Bacon Brussels Sprouts), or an easy salad (like my 4-Ingredient Pesto Pasta Salad, this Chopped Mediterranean Cucumber Salad, or this Roasted Fennel Salad With Orange Honey Dressing). And don't forget about the bread! Sweet Potato Cornbread or No Knead Rosemary Parmesan Bread go great with meatloaf!

Meatloaf Glaze Recipe Frequently Asked Questions
Either works. White vinegar gives a sharper, cleaner tang; apple cider vinegar is slightly milder and fruitier. The difference is subtle once the glaze is baked on. Use whichever you have on hand.
Absolutely! Save those leftovers! This tangy glaze works as a delicious topping for grilled or baked chicken, burgers, pork tenderloin, meatballs, or even meatloaf sandwiches. Apply it the same way: brush it on during the last 15-20 minutes of cooking so it caramelizes rather than burns.
Yes! This tangy meatloaf sauce will go great with a turkey loaf or any homemade meatloaf recipe. It pairs just as well with a meatloaf made from lean ground beef as it does with a meatloaf made with ground turkey.
Yes. Mix the glaze up to 3 days ahead and store it in a sealed jar in the refrigerator. Stir before using - the brown sugar can settle to the bottom. It takes about 2 minutes to make, so preparing ahead is convenient but not necessary.
Store any leftover meatloaf in an airtight container in the refrigerator for up to 3-4 days. You can also freeze individual slices of meatloaf for longer storage, ensuring that each slice is wrapped tightly in plastic wrap or aluminum foil to prevent freezer burn.

Recipe

Classic Meatloaf Glaze Recipe With Brown Sugar
Ingredients
- ¾ cup ketchup
- 1 ½ teaspoon white vinegar
- 1 teaspoon Worcestershire sauce
- 2 ½ teaspoon brown sugar
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper
Instructions
- Combine all ingredients in a small bowl and whisk well.
- Add the sauce to your meatloaf in an even layer over the top of the meatloaf mixture when it has about 15-20 minutes of cooking time remaining, then return to the oven.
- Cook the meatloaf for an additional 20 minutes, or until your meatloaf is completely cooked and the glaze has caramelized over the top.
Notes
- Don't add the meatloaf glaze until the meatloaf has about 15-20 minutes of cooking time left. This prevents the sauce from burning, but gives it just enough time to carmelize and soak into the meatloaf.
- Allow the meatloaf to rest for a few minutes before slicing into it. This gives it time to "set" and makes it less likely to fall apart.
- Store leftover sauce in an airtight container (like a mason jar) and use on chicken, burgers, or, my favorite, meatloaf sandwiches!

Total game changer. I will never make a Meatloaf (Lipton onion soup recipe) or Glaze it any other way. I did add the Mustard . And I only had Champange Vinegar so I used that. It was Amazing. You could add and change the profile of this recipe with other ingredients. But I would recommend you only do so if you don't have that certain item. And don't stray to far from the complexity of flavor of that item. You & your Family won't regret this comfort meal.

I made this recipe tonight. It was really very delicious and quite easy to make, and I definitely will be making it again in the future. I followed the recipe exactly as posted, however I added 1 teaspoon of garlic powder and 1/2 of a teaspoon of onion powder to the glaze.
